The Gusto is Iacobucci HF Aerospace's flagship galley cooking appliance — the first and, at its launch, only multifunctional oven designed specifically for aviation use around induction technology rather than conventional convection resistance heating. It has won three Mercury Awards, the aviation industry's leading product excellence recognition in the passenger experience category. Induction heating generates electromagnetic energy directly within compatible cookware rather than heating an element that in turn heats air that in turn heats food; the practical result is that the Gusto's exterior surfaces remain at ambient temperature during operation, eliminating the burn and fire risk that makes a conventional oven a galley hazard in a confined crew workspace. Cooking speed is faster than convection, and because heat is applied directly to the vessel rather than through circulating air, moisture and volatile aromatics are better retained — a tangible quality difference when the food is a premium first-class meal course that has already been chilled-loaded and must recover to service temperature without drying out. The Gusto is designed for simultaneous multi-dish preparation: a meat course, a fish course, and side vegetables can occupy the cooking zones concurrently, each receiving appropriate temperature treatment, removing the sequential constraint of a single-zone oven.
